Camel meat goulash paired with a glass of the renowned sweet Bordeaux wine Château d'Yquem could be one of the worst food and wine combinations at Pullman Dubai Downtown hotel restaurants next year. The Pullman Hotels & Resorts chain, part of the premium portfolio of the Accor group, has unveiled a global brand transformation and a vision for the future in which culinary and mixology experiences will lie at the heart of the Pullman experience. As an example, they highlighted the experimental bar ritual Unexpected Pairings, which will allow guests to draw cards from a deck to create their own food and wine flavor combinations

This experience redefines the art of mixology and gastronomy, sparking curiosity, conversation, and exchange through contrast, discovery, and taste, explained the masterminds behind this oeno-gastro circus. For those of us who won't be making the trip to the United Arab Emirates for this redefinition or this new kind of (non)sense, there is a detail worth noting: a hotel from the same group also exists in Buzin, near Zagreb. It is close to the Vukomeričke Gorice wine region, and perhaps they might offer a pairing where a card from a Hungarian-style deck, alongside traditional krpice sa zeljem (pasta with cabbage) or blood sausage complements a Prädikat (special harvest) wine made from the indigenous Dišeća Ranina variety or one aged on fine lees.
