Morels are here! You can find them along the edges of the woods, so it’s time to get a good Chardonnay and/or Pinot Noir ready

The simplest method is to melt butter in a pan and sauté the morels for 10 to 15 minutes, first allowing them to release their liquid, then letting some of it evaporate. Just crack the eggs over them. For a quick meal like this, the most time-consuming part is getting the wine to the right temperature. Which wine? A Pinot Noir would be an excellent accompaniment, specifically, one from Plešivica. There is no need to dig through your cellar. The relatively fresh yet absolutely serious 2022 Pinot Noir from the Korak winery (Križevac and Cimbuščak) will be a perfect match.

Krešo Ivančić’s Griffin Chardonnay Sur Lie also hails from Plešivica. It comes from the highest-altitude winery in this small but magnificent wine-growing region, which has spent decades cultivating Chardonnay wines aged on fine lees. This style of winemaking requires periodic stirring or barrel rotation to rouse the yeast and keep it active. This process imparts fullness while preserving a distinctive freshness. This Griffin pairs beautifully with morels in a white sauce: the wine’s creamy texture complements the creamy dish perfectly.
